Oriental Salad

Ingredients

113 grams (4 ounces) snow peas topped and tailed

1/2 Chinese cabbage finely shredded

224 grams (8 ounces) mung bean sprouts

2 corn cobs raw

113 grams (4 ounces) fresh button mushrooms thinly sliced

1 red capsicum julienned

8 spring onions julienned, retaining most of the green parts

Special dressing (GF* DF, V):

2 tablespoons cold-pressed virgin olive oil

1 tablespoon vinegar (white-wine balsamic or apple cider)

Juice of 1 lemon freshly squeezed

1 tablespoon soy sauce (or gluten free soy sauce*)

1 garlic clove minced (optional)

1 heaped tablespoon almond slivers

2 heaped tablespoons toasted sesame seeds

Description

Directions

Slice corn kernels from cobs. Steam snow peas for 2 minutes and plunge into cold water (about 30 seconds). Drain then combine with all the other ingredients and the special dressing.

Special dressing: Mix all the ingredients together and pour over the Oriental salad. Toss and serve.
